  1. In a large mixing bowl, whisk together the whole wheat flour, oat flour, ground flaxseed (if using), baking powder, baking soda, and salt.

  2. In another bowl, whisk together the buttermilk, egg, honey, melted butter or oil, and vanilla extract until well combined.

  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; it's okay if there are a few lumps.

  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.

  6. Flip the pancakes and cook for another 1-2 minutes, or until golden brown and cooked through.

  7. Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining pancakes.

  8. In a small saucepan, combine the mixed berries and honey. Cook over medium heat for 3-4 minutes, or until the berries are soft and juicy, stirring occasionally.

  9. Remove from heat and set aside

  10. Stack the warm pancakes on serving plates. Spoon the warm mixed berry topping over the pancakes. Drizzle with additional honey if desired.

    Garnish with fresh mint leaves for a pop of color and extra freshness.
