Ingredients
  • 4 cups romaine lettuce (chopped)
  • 2 cups cherry tomatoes (halved)
  • 1 cucumber (sliced)
  • 1/2 red onion (thinly sliced)
  • 1/2 Kalamat olives (pitted)
  • 1/4 cup extra virgin oilive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • salt and pepper to taste
  • 1/2 cup feta chees (crumbled, optional)
Instructions
  1. In a large bowl, combine the chopped lettuce, cherry tomatoes, cucumber, red onion, and olives.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to coat evenly.

  4. If using, sprinkle crumbled feta cheese on top.
