Ingredients
  • 1 whole grain tortilla
  • 1/2 cup hummus (store-bought or homemade)
  • 1/2 cup mixed grilled vegteables (such as bell peppers, zucchini, eggplant, mushrooms, etc.)
  • 1/4 cup red onion (sliced)
  • 1/4 cup crumbled feta cheese (optional)
  • 1 tbsp olive oil
  • salt and pepper to taste
Instructions
  1. Preheat your grill or grill pan over medium-high heat.

  2. Toss the mixed vegetables with olive oil, salt, and pepper in a bowl until evenly coated.

  3. Grill the vegetables for 3-4 minutes on each side until they are tender and have grill marks.

  4. Warm the whole grain tortilla on the grill for about 30 seconds on each side, or until it's pliable.

  5. Spread the hummus evenly over the tortilla, leaving a border around the edges.

  6. Arrange the grilled vegetables and sliced red onion on top of the hummus.

    If using, sprinkle crumbled feta cheese over the vegetables.
  7. Roll up the tortilla tightly, tucking in the sides as you go, to form a wrap.

  8. Slice the wrap in half diagonally and serve immediately, or wrap it in foil for later.
