Ingredients
  • 1 cup dried lentils (any variety you prefer)
  • 1 onion (diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground corianderground coriander
  • 1/2 tsp smoked paprika
  • salt and peper to taste
  • fresh parsley (choopped, for garnish)
Instructions
  1. Rinse the lentils under cold water and pick out any debris. Drain and set aside.

  2. In a large pot, heat olive oil over medium heat. Add diced onions, carrots, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

  3. Stir in ground cumin, ground coriander, and smoked paprika. Cook for another minute until the spices are fragrant.

  4. Add the rinsed lentils, diced tomatoes (with juices), and vegetable broth to the pot. Stir well to combine. Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for about 25-30 minutes or until the lentils are tender.

  5. Taste the soup and season with salt and pepper according to your preference. Adjust the seasoning if needed.

  6. Ladle the hot lentil soup into bowls. Garnish with freshly chopped parsley for a burst of freshness.
