One-Pan Baked Salmon with Veggies is a simple and healthy dinner option. This dish is full of flavor, featuring tender salmon fillets and a colorful assortment of roasted vegetables.

Ingredients
  • 4 salmon fillets
  • 1 zucchini (sliced)
  • 1 bell pepper (sliced)
  • 1 red onion (sliced)
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 lemon (sliced)
  • 1 tsp dried oregano
  • salt and pepper to taste
Instructions
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Arrange the salmon fillets on one side of the baking sheet. Arrange the zucchini, bell pepper, red onion, and cherry tomatoes on the other side.

  3. Drizzle the olive oil over the salmon and vegetables. Season with oregano, salt, and pepper.
