Ingredients
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 red bellpepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 jalapeno pepper (seeded and minced, optional)
  • 1 lb boneless, skinless chicken breasts (diced)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 can black beans (drained and rinsed)
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 lime (juiced)
  • fresh cilantro (for garnish, optional)

  • tortilla chips (optional)
Instructions
  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, garlic, and bell peppers. Cook, stirring occasionally, until softened, about 5-7 minutes.

  2. Add the diced chicken to the pot. Cook, stirring occasionally, until chicken is no longer pink, about 5 minutes.

  3. Stir in the chili powder, cumin, oregano, smoked paprika, salt, and pepper. Cook for another 1-2 minutes until the spices are fragrant.

  4. Add the black beans, diced tomatoes (with their juices), and chicken broth to the pot. Bring to a simmer.

  5. Reduce the heat to low and let the chili simmer, uncovered, for about 20-25 minutes, stirring occasionally, until the chicken is cooked through and the flavors have melded together.

  6. Once the chili is ready, stir in the lime juice. Taste and adjust seasoning if necessary.
