This Tofu and Spinach Scramble is a protein-packed vegan breakfast option. It's easy to make and full of flavor, perfect for a healthy start to your day.

Ingredients
  • 1 block firm tofu (drained and crumbled)
  • 1 tbsp olive oil
  • 1 small onion (diced)
  • 1 bell pepper (diced)
  • 2 cups fresh spinach (chopped)
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • salt and pepper to taste
  • fresh chives or green onions (for garnish)
Instructions
  1. In a large skillet, heat the olive oil over medium-high heat.

  2. Add the onion and bell pepper, and sauté for 3-4 minutes until softened.

  3. Add the crumbled tofu to the skillet and stir to combine.

  4. Season with turmeric, cumin, paprika, salt, and pepper.

  5. Cook for 5-7 minutes until the tofu is heated through and slightly browned.

  6. Add the chopped spinach to the skillet and cook for another 2-3 minutes until wilted.

  7. Garnish with fresh chives or green onions.
